The story commenced in Malaga, Andalusia, in 2008, when I had the pleasure of travelling for work with other colleagues to this wonderful land, which produces the best raisin wines in the world. My single portion encloses, between two ultra fine leaves of sponge cake, a light buffalo ricotta mousse and sultanas macerated in rum scented raisin wine. Serve with Muscovado sugar caramel.
