An apparently simple but complex dessert. I wanted hazelnuts to fully express their properties in this creation. Crunchy cream puff with encased a velvet smooth butter cream, crisp caramellised hazelnuts and a semi-liquid hazelnut praline and salt blossom core. This creation expresses my idea of our land’s hazelnuts.

INGREDIENTS: Butter base cream (BUTTER, sugar, pasteurised EGG yolk, water, glucose syrup), HAZELNUT paste (19.16%), Hazelnut praline (15.33%), (dry HAZELNUTS, sugar, iodised salt), Custard cream (UHT whole cow’s MILK, UHT single cream (MILK cream, thickener (carragenin)), Pasteurised EGG yolk, Sugar, Corn starch, Rice starch, Bourbon vanilla powder from Madagascar, iodised salt), Puff pastry (whole hen EGGS, water, pasteurised whole cow’s MILK, BUTTER, WHEAT flour type 00, sugar, Bourbon vanilla powder from Madagascar), Dry HAZELNUTS (2.68%), Cocoa powder, Food grade colouring. May contain: sesame, soy.
